Pesto pasta 🍝 🌱🍄🍃🍅 I love this new pulse pasta by @sanremopasta 😍
It’s a great source of fibre and protein so makes for a perfectly balanced and nutritious pasta dish. 
If you’re a lover of pasta you have to give it a go!
I made mine with my homemade walnut pesto (will post recipe in the coming days), sautéed mushrooms, tomatoes, baby spinach and fresh basil 😍
So happy I made plenty to take for lunches throughout the week!!

Note: I personally spilt a packet of pasta across three or four meals as they are quite large portions. That whole pan is only recommended as two serves 😱

Tomorrow is #mealprepmonday so to end of my day and to start this week on the right track, were having a meatless salad with greens, tomatos, goat feta and fig balsamic dressing 👌

My diet is quite high in fat and protein🥑🧀🍗
(obviously high in veg and fruit as well) because my body doesn't bloat, I don't gain weight from it, it satiates me and kicks my cravings in the butt. It's taken me a long time to figure out what my body likes and how to fuel it while still enjoying my food 😍 °

This week is a little different in a couple of things. First off, I am actually doing 2 days of meal prep and this one is just the first! I am doing extra meal prep this weekend in preparation for my next few weekends being super busy.

Second....I have decided that my blog will be going on a hiatus for the next few months, basically until the end of the year. This is mostly due to my efforts to grow my business and how much time it's currently taking. .
With the holidays fast approaching, I'm doing a lot of in-person markets selling my jewelry. Some weeks as many as 4 days of markets! Between that, actually making the jewelry, working at my "pay the bills" job, and working at the YMCA, I just don't have the time available to work on my blog.

My hope is that next year I won't be doing the "pay the bills" job and will have more time to devote to the blog and to my business! (Want to check out my work? You can see it over at @nymphinthewood )

This past week has been extremely stressful for me but I worked out Tues/Wed/Fri/Sun and it truly helped keep me sane 🙌🤙. I incorporated 20 min of HIIT sprints (30 seconds on, 30 seconds off) after my lifting exercises each day and I'm really enjoying it. I like adding sprints bc it makes me feel more athletic and helps me keep my cardio in check 😅 I will probably go with the same schedule this week because I'm expecting this week to be just as wild heh. I'm feeling gr8 now and ready for the new week and I'm super excited about all the gainzzz!! Have a lovely week, everyone 🤗

This week I seem to be getting my Fall on with lots of 🎃 recipes! Although my recipes say Fall, the Summer weather seems to be sticking around - it’s been 31 Celsius today! ☀️ I have to say, I’m ready to enjoy the cooler and cozy Fall weather, though. One of the reasons I enjoy fall is because people are getting back to their routines and are back in productivity mode. I thrive off routine and am excited to get going on some business projects myself!

Trying new things is HARD. 😣I challenged myself today (well this whole weekend) by testing out five new recipes, including this lovely vegan lentil curry.

😤I had every excuse to skip prep today. I'm exhausted from running around this weekend, my apartment no longer has AC and it's over 80 degrees and I have a pile of stuff to take care of for my move across the country.

💪🏼Pushing through the hard stuff instead of taking the easy way out is what makes us stronger, and it's the only way to achieve our goals. ⏰For me? That goal is always to save time AND be healthy. Even when I'm stressed and having a day, I know I'll thank myself later.

These egg muffins are so simple and a new go to for me. I love having them ready to go in the morning with my superfoods. With this recipe, I didn't really measure anything.

In a pan, sauté some diced onions and add about a bags worth of spinach(YUP!). The spinach cooks down so much that you'll need it all for 12 muffins.

In a separate bowl, scramble 12 eggs(of egg whites), Italian seasoning, and feta cheese. Once spinach is all cooked, take a tbsp of spinach/onion combo into muffin tin. Top with eggs.

Bake at 375 for 14-17 minutes.

Who gets up at 4:30am on  Sunday to #MealPrep ? Yup, this girl! So here you have it, it's another easy and simple week. I'm not looking to do anything new between now and that race. Only tride and true. It's the last week for #Spartan Beast on Saturday - I have SO much to get ready for this week. Meal prep will make my life so much easier with one less thing to have to worry about. You'll see I'm only prepping for 4 days since we'll be in Tahoe the Friday before. ----------
