Meatball & Homemade Noodle Soup over Mashed Red Potatoes
This dish is so comforting! Great for cold weather. It's hearty and delicious. The potatoes make the broth so silky!
Start by making dough for noodles(will have my recipe for noodles soon). Let it rest for 20 minutes. Roll dough out and cut strips of noodles. Leave on plate with flour until ready for use!
In a deep sauce pan heat unsalted chicken stock. Add in cut up broccoli, carrots, and cauliflower. Season with salt and pepper.
In another bowl, mix ground beef and ground pork with Italian breadcrumbs, eggs, basil, salt, pepper, red crushed pepper flakes, and Garlic powder.
Grab little mixture at a time and roll into meatballs.
You can sear them for a harder exterior, or bake as well but I wanted them extremely soft so I just threw them into the soup.
In another deep sauce pan add water and red potatoes. I leave the skin on. Season water with salt. Boil until a fork goes through the potatoes effortlessly. Drain and place in a bowl. Add a little almond milk and butter. Salt and pepper. Then mash up.
When the meatballs are cooked through and potatoes are ready to go. Throw your noodles into the soup. They should take about 3-4 minutes to be cooked through.
Add some mashed potatoes to the bottom of a soup plate. Ladled over the soup. Enjoy!
