Uni risotto. This dish is one of my most favorites today. This is not a regular Uni risotto that I ever had before because chef Takano also uses grilled Kinmedai in the mixture. The components of rice, Uni and grilled Kinmedai, and a touch of fresh karasumi go together very well. Best Uni risotto I ever had. ⭐️⭐️⭐️👍

Finely chopped Maguro and soy-sauce marinated sharkfins. Sharkfins in Otsumami is something rather recent in sushi world.  The piece of sharkfins at the bottom has a very gelatin-like texture, very soft yet a little chewable, with mild sweet soy-sauce flavor. It couples well with finely chopped Maguro on top, a combination with new texture but familiar taste of Tsuke Maguro.

I've tried uni at several Japanese places, and I've found Ryo to serve really good uni. For me, uni has to be creamy, non-metallic and not bitter. It's also important to me that it has to be sweet. The bafun uni I've had at Ryo checks all these boxes.

For my birthday, @yumpop surprised me with an @aesopskincare facial and a customised dinner at Scaled by @ahhuakelong, their latest spot. This is my favourite dish from our dinner - local mussels, fresh from their farm, poached in an invigorating Chinese herbal broth. Dehydrated mussels and kombu were used in making the broth to achieve intense flavour and umami and I especially love the light touch of 5-spice powder which gave it depth. This was exactly what I was craving for that day. ❤️
